Onion soup

Preparation

Melt the butter in a pot, than add the onion and cook it slowly for approximately 1 hour . The onion has to cook on a gently flame and never be burned. Add now the flour and mix. Toast the flour on gentle flame, than add the stock. Notice: the stock has to be hot before you add it ! Now cook for about 30 minutes. Once the soup is ready you can serve it with a slice of toasted bread , some grated parmigiano , the gruyere and some butter flakes.

Tricks

The only way to not cry when you cut an onion is to wear goggles !!!....as shown in the photo by chef Alessandri

• Red onion 17,500 ounces
• Butter 1,7 ounces
• Flour ( all purpose ) 0,90 ounces
• Vegetable stock 4 cups
• Calvados liquor half glass
• Sliced toasted bread
• Gruyere cheese grated 3,5 ounces
• Parmigiano cheese 1,5 ounces
• Mixed spices and herbs
